In the Simonet family, the vine has been cultivated for more than 200 years. Today, traditions have evolved and the vines are all biodynamically treated. The Simonet family, including the three children, are all working on the estate. The cultivated area is 12 ha in the Vully. Biodynamic cultivation trials began in 2010 so that the estate can be fully certified in 2016. The treatment products have a natural origin (sulphur and copper) and are supplemented by herbal teas (nettle and wicker) and decoctions (horsetail).
Gamay is an ancient grape variety that was already cultivated in the Middle Ages. Unwelcome in Burgundy, it was banned in this region. Gamay is also an important grape variety in Switzerland (1400 ha), particularly in Geneva and Valais.
